Proof  in the Penn Quarter of Washington DC  has an  Enomatic wine serving system which keeps wine for up to 2 months by filling the space in the bottle with argon gas, displacing oxygen which would normally make the wine go off after a day or two.   The Enomatic  can also serve accurate tasting and glass measures, allowing Proof to serve 16 varieties of white and 16 varieties of red by the glass.

I’m curious what others think about enomatic machines. I had used them once at a wine bar dedicated to them in San Francisco and now work at a bar that has 3. I find them very impersonal — counter to the whole charm of a classic wine bar, where the owner or a wine expert can give you suggestions on what to try. Plus, I love the feeling of getting a “free” taste. It makes me feel special versus paying $10 or more for a 1.5 oz pour of something fancy.
