  1. It’s an unwritten rule of our holidays that we do a cookery course. As well as learning about the region’s cuisine it’s also a good way of getting to know the people.

    The instructors could usually do the teaching but on autopilot and they often like to chat about local, customs, politics etc.

    I bet you could learn a lot about Vietnam at the Nam Hai Cooking Academy.

  3. In some ways it’s the traumatic past that fascinates us. Those of us old enough to witness the last helicopters leaving Saigon have always kept an eye on Vietnam.

    1. I remember watching the last days of the Vietnam War on the news. Little did we know that we’d be talking about Vietnam as a hot spot for luxury accommodation, indulgent spas and fine cuisine in our lifetime.

  5. In some ways this is a very different Vietnam to the one I saw when I backpacked my way round the country as penniless student.

    I may not have had the luxury spas and 5 * suites but the scenery was still stunning.

    It would be nice to return and do the country in Six Senses style.

  6. Vietnam is a long way from the UK and it’s well worth the effort. Someone once told me that it has a longer coastline than California. I also like the fusion of French and Vietnamese cuisine. Two nations that really know what they’re doing when it comes to food.
