Three-Michelin-starred chef Heston Blumenthal is no stranger to innovation in the kitchen. Following on from his chemistry lab approach, he’s now experimenting with sound. His latest dish at The Fat Duck restaurant in Bray is called The Sound of The Sea. It consists of shellfish, foam and edible sand, and is to be accompanied by the sound of… yes, you’ve guessed it… the sea, supposed to give a heightened, more intense culinary experience. Hmmm…
